Using Siri on Mac and other third party apps

With the latest iTeleport 5.2 update, you can pass along commands through the VNC to your Mac laptop or desktop. Siri will then transcribe what you’ve said and pass it along to iTeleport, which will automatically launch the app specified as long as it can find it on your machine.

beside iteleport, there is Evernote which has given a tip today on how to use its note-taking service with Siri for convenient hands-free note dictation. simply just setup Evernote as a contact in your address book and use your incoming Evernote email address, you can do this by signing into your Evernote account and go to the Settings area.
after this setup you can launch Siri and say -Send email to Evernote- . Siri will then send the email to your Evernote account, which will automatically store the email as a new separate note. Easy rite?

This Siri trick should work with other third-party apps such as Remember The Milk which also provide a way to submit entries via email, use the same steps as above for setting up.
